This is pure salep (sahlep) powder: the ground tuber of wild orchid, with nothing else added. It comes from Bucak, the district in Turkey's Burdur province long regarded as the country's salep capital, and Bucak Salebi carries an official Turkish geographical-indication registration (Türk Patent, 2021) that ties the name to that origin and its traditional stone-milled method.
What makes salep special is glucomannan, a natural starchy fibre in the orchid tuber. When you warm the powder into milk it draws everything together into a thick, silky, faintly aromatic drink. It is the same property that makes salep the classic thickener and stabiliser behind Maraş (Kahramanmaraş) ice cream, the famously stretchy Turkish dondurma you eat with a knife and fork.
Otağ Doğal sells this as %100 salep, stone-milled (taş değirmende öğütülmüş) and free of any non-salep ingredient, so it behaves differently from the cheap blended sachets sold in many shops, which are mostly starch, sugar and flavouring. A little goes a long way.
- 100% pure ground wild-orchid tuber, no starch, sugar or flavour added
- Origin: Bucak, Burdur, Turkey — geographical-indication registered
- Stone-milled in the traditional Bucak method
- For hot salep drinks and homemade Turkish (Maraş) ice cream
- 50g jar
To make the drink, whisk a small spoonful into cold milk, heat gently while stirring until it thickens, then finish with a dusting of cinnamon. As a thickener, blend it into your ice-cream base before churning.
