Crocant — krokan in Turkish — is a classic caramelized-nut brittle: roasted nuts and seeds folded into hard caramel until they set glassy and snap clean. This 140g Tuğba Kuruyemiş assortment puts three brittles in one tray instead of one, so every handful gives you a different crunch.
The headline is the green Antep pistachio brittle. "Antep fıstığı" is simply the Turkish word for pistachio — the name comes from Gaziantep, the city in southeastern Türkiye that lends its name to the nut and grows the variety prized for its deep green color and intense, almost citrusy flavor. Alongside it the mix carries amber peanut and almond crocant and pale, nutty sesame crocant, so you move from rich and buttery to toasty and seed-forward across the same box.
The caramel is built on beet sugar with a touch of citric acid, which keeps the brittle bright rather than heavy and cloying. It stays firm and crisp — this is a brittle you bite and crack, not a soft chew.
