Turkish pulled hazelnut halva, known in Turkish as fındıklı çekme helva, is one of Anatolia's oldest sugar confections. It belongs to the same family as pişmaniye: sugar is gently pulled and folded together with roasted wheat flour until it forms hundreds of fine, layered strands. The result is a pale, fibrous block that looks dense but melts the moment it touches your tongue, leaving a clean, buttery sweetness studded with roasted hazelnut.
