This Bİrsalkım pestil is made on a mulberry (dut) base — the fruit is cooked down into a thick, naturally sweet paste, then rolled generously around a core of whole hazelnuts and sliced so each piece shows a spiral of dark fruit wrapped around the nuts.
This is the hazelnut-forward style — labelled "Bol Fındıklı," meaning rich in hazelnut. Where a plain pestil is mostly fruit, here you get a full, buttery hazelnut bite running through every rolled piece, balanced by the deep, jammy mulberry around it.
