A sablé is a French butter shortbread — short, sandy, and lightly sweet, with a crumbly texture that distinguishes it from ordinary biscuits. Al Sultan Sweets, baking in Istanbul, has applied that tradition to a collection of miniature petits fours, each one individually decorated and arranged in its own fluted paper case inside a round dark-green tin.
The tin holds seven distinct varieties. Three are pale, undipped sablés: one finished with crushed pistachio, one with white sugar pearls, and one with golden sugar pearls. Two are chocolate-dipped: one topped with white sugar pearls, one with fine chocolate sprinkles. Two are made from a darker chocolate sablé dough: one garnished with whole cocoa nibs, one with copper-orange sugar pearls. The cookies are packed in concentric rings, so the full assortment is visible the moment the lid comes off.
At 600 grams the tin is a generous size — suited for a guest plate served alongside Turkish coffee or Arabic coffee, for an office table during a meeting, or for a gift that arrives in its own presentation-ready packaging.
